  • Proper Ice Handling Guidelines:

    • Storing: Store ice at temperatures between 0°F and 20°F (-18°C to -6°C). Lower temperatures may create brittle ice and prolong tempering. Tempering allows the ice to warm up before use, preventing cracking when liquid is poured over it.
    • Handling: Use heavy-duty, serrated ice tongs to handle ice. Separate any cubes frozen together by gently inserting an ice pick or knife between the joints. Always pour beverages over the ice rather than dropping cubes or spheres into a full glass for optimal efficiency and minimal dilution.
    • Stamped Ice: When using stamped ice, pour drinks around the side of the ice rather than directly over the stamped impression for the best presentation.
    • Refreezing: Tempered ice can be refrozen for future use. Ensure the ice is separated to prevent pieces from freezing together.
